Beetroot Halwa without Koya

Halwa is my favorite. My mom makes different varieties of halwa. In fact my father was spell bound to mom because of my mom’s halwa 😉

Today I made this Beetroot Halwa for Mister’s birthday. I have seen online many of then uses koya . But I followed my mom’s recipe.

Ingredients for Beetroot Halwa:

Beetroot 2
Sugar
Ghee
Milk
Cardamom Powder

Making of Beetroot Halwa:

Wash and peel beetroot. Cut it into pieces. You can grate them if you like. I was in a hurry so didn’t grate it.

Take a pan and add ghee when pan is hot. When ghee is hot add cashew nuts and sliced badam and pista and fry them till they are golden in color. Add any kind of nuts you like. Take them into a bowl.

At this point you can add raisins and saute till they puff up. I didn’t add raisins today.

Now add more ghee and add chopped or grated beetroot. Saute till the raw smell is gone. It will take few minutes. Don’t skip this as beetroot smell is very earthy and you don’t want that in end result.

When beetroot is sauted add milk and cover the pan. Cook till beetroot is done.

Make sure any liquid is evaporated and now add sugar. After adding sugar start mixing and you can see sugar melts into liquid. Now cook on medium heat till all the liquid is semi evaporated.

Halwa will solidify after removing from pan. Do don’t keep it on stove till it is completely dry. Remove from stove when liquid is 75% gone.

Add cardamom powder and the end of cooking process. Stir in fried nuts and raisins.

Serve cold or hot. I like it hot. Enjoy!!!

You can add carrots along with beetroot , but it will get beetroot color only and you can taste both carrot and beetroot 🙂
