Curd Idly

This is another simple idly variety, Curd Idly..Adopted from Mallika Badrinath’s cookbook, my Mom’s favorite chef πŸ™‚ If you are looking for basic Idly recipe check here.

Ingredients for Curd Idly:
1) Rice (Regular or Brown or Boiled Rice) . I have used regular rice. 2 Cups
2) Urad Dal 1 Cup
3) Thick Sour Curd 2 Cups ( I used 1 Cup)
4) Soda 1/4 tsp
5) Salt as required
6) Cumin seeds 2 tsp
7) Black Pepper Whole 2 Tsp
8) Chana DalΒ  1 Tbsp
9) Green Chillies 3-4 (Change according to your taste)
Preparing Curd Idly :
Soak Rice and Urad Dal separately for 3-4 hours. Grind Urad dal first with less water until you get soft and fluffy dough. Grinding urad dal first helps cleaning your grinder easy πŸ™‚
Next grind rice and green chillies till you get rawa like consistency.
Now mix both of them adding salt and enough sour curd. Adjust your consistency if your battery is too watery add little less sour curd or if it is too thick add little more sour curd.
Add Cumin seeds, peppercorns and chana dal and mix the batter. Cover with a lid and allow to ferment for 20 hours.
Before making idlies add hot oil to the batter and also add soda to the batter and mix properly.

Now grease your idly plates and steam till Idlies are done.

Serve hot with your favorite chutney. Enjoy Curd Idly.
