Egg Curry/ Egg Pulusu

I have been eating Egg Curry from my childhood. Each time curry tastes different even though it is prepared in the same way.

I had like different egg curry recipes from around the world. With slight different ingredients egg curry tastes different.
Today I have tried this egg curry.
Increase and decrease or change ingredients in this recipe make your own.
Ingredients for Egg Curry :
1) Boiled eggs 4-5
2) Chopped Onions 1-2
3) Chopped Tomatoes 1-2
4) Green Chillies 2-4
5) Ginger Garlic Paste 1 Tbsp
6) Curry Leaves
7) Chilly Powder 1 tsp
8) Daniya Powder 1 Tbsp
9) Turmeric Powder 1/2 Tsp
10) Masala Powder 1 tsp
11) Coriander Leaves
Lets prepare Egg Curry now …
Take a pan and add oil to the pan. When oil is hot add mustard seeds and wait till splutter add cumin seeds. Add chopped onions, green chillies and curry leaves. Fry until onions turns transparent. If you fry for long time they will turn into brown color and this gives sweet taste to the curry.
Add tomatoes When onions are cooked. Fry till they become mushy. Add all powders and fry till oil starts leaving the pan.
Add water and let the curry boil for few minutes. Taste curry now add anything if required and add salt. Now add boiled eggs. Let the curry boil for few minutes. Add chopped coriander leaves.

Serve hot with dosa, rice , white bread or anything you have. Enjoy !!!
