Eggless Healthy Banana WalNut Muffins

Its been a while since I have made muffins. This time I came across this wonderful recipe. I made few changes to this recipe. I will explain it in a minute. But they are so delicious and my girl was crazy for them. These eggless banana muffins are not too sweet and don’t have too much fat and that’s good to our tummy 😉

Ingredients for Eggless Banana Nut Muffins:

Whole Grain Flour ( I made my own by mixing few flours available in wholefoods flour section) or Whole Wheat Flour or Atta 1.5 Cups

Oats Flour 1/4 Cup ( I didn’t had rolled oats . I had old fashioned oats and I had blended them. Wish I had made fine powder)

Walnuts Chopped 1/4 Cup

Packed Brown Sugar 1/2 Cup

Ripe Banana’s  4

Butter at room temperature  1/4 Cup

Flax Eggs 2 ( Flax Seed Powder 1 Tbsp + Water 2.5 Tbsp makes one Flax Egg. So Mix 2 Tbsp of flax seed powder in 5 Tbsp’s of water)

Baking Soda 2 Tsp

Vanilla Extract 1 Tsp

Salt 1/2 tsp

Making of  Eggless Banana Nut Muffins:

Preheat oven to 375 F.

First mix dry ingredients in a bowl. Mix Whole grain flour ,salt,baking soda,oats,chopped walnuts.

( acually I forgot to mix brown sugar with bananas and other liquid ingredients silly me ;))

Now mix wet ingredients in a bowl. Mash bananas. To this add brown sugar,vanilla extract, melted butter and mix well.

(I have used frozen bananas and fresh bananas. I freeze fully ripped bananas and use them in smoothies or in baking.)

Add wet ingredients into dry ingredients and mix them well.

Mine was bit dry. Next I will add one more banana or increase butter.

Now fill muffin pan with equal amounts. I have used 1/4 cup and filled almost 12 muffins.

Bake them in 375 F for about 20-22 min. Check whether muffins are done by inserting a toothpick and if it comes out clean you are done.

My kid was eagerly waiting for them to finish 😉

These are not very moist but they are tasty.Next I want to add fine oats flour or use rolled oats.
