Eggless Vanilla Ice Cream

I prefer making Eggless vanilla Ice cream rather than Ice cream with eggs. I don’t know Ice cream can be made with eggs before coming to US. I have seen many Chefs making custard with eggs for creamy Ice creamย  , but I have tried only once and it was creamy but I felt it should be made with lots of patience, which I don’t have now ๐Ÿ˜‰ I have used Cuisinart recipe book for making this basic Eggless Vanilla Ice cream.

Ingredients for Eggless Vanilla Ice cream:

Heavy Cream 1 pint
Milk ( I have used Whole milk) 1cup
Vanilla Essence ( use Vanilla bean for must stronger flavor) 2 Tbsp
Sugar ( I have powdered sugar after measuring ) 3/4 Cup ( use 1 cup if you want more sweeter version. I felt mine was little less sweeter )

Salt a pinch

Powder Sugar and mix with milk and stir till sugar dissolves. Or you can use stove top to melt sugar and milk.

Use whatever method you like and melt sugar into milk.

Now mix in all other ingredients and chill in refrigerator for 3 – 4 hours or overnight.

Pour this mixture into Ice cream maker and start churning. My Ice cream took about 35 min to make Ice cream. My daughter was after me asking continuously “Is it done yet ?” ,so I have to remove it early. You can check the consistency and make your call.

If you don’t have Ice cream maker, put the liquid into freezer and after 1 hour remove and blend it in blender and put it back into freezer and after 2 hrs remove and after defrosting blend it again and put it back into freezer . Repeat this process till you get nice consistency. It will take 4-6 times I think. This is how my Mother used to make Ice cream .

You can make quick chocolate covered Ice cream . Melt some chocolate chips in microwave or use double boiler and take a scoop of Ice cream and dip it into melted chocolate. Immediately chocolate solidifies forming firm chocolate covered Ice cream.
