Now add gongura and curry leaves. Fry till they change their color. I have just used gongura leaves.
Add green chillies and fry till done. Now add coarse powder and fry for few minutes. Add chopped onions and fry for few minutes.
Add chopped cilantro leaves. Now add cooked rice and mix till properly mixed.If you are using left over rice this tastes good. If you are using freshly cooked rice, allow the rice to cool properly and spread cooked rice on a big plate and cool. If it is just cooked and if you mix with gongura paste ,rice will become mushy . You don’t want a mushy rice.
Gongura Fried Rice
- Cooked Rice 4 cups
- Gongura Leaves 1 cup
- Curry Leaves 1 cup
- Corriander Seeds 2 tbsp
- Red Chillies 5-6
- Chana Dal 1 tbsp
- Urad Dal 1 tbsp
- Hing a pinch
- Ghee 2 tbsp
- Mustard seeds 1 tsp
- Green Chillies 3-4
- Onion 1 Big
Take a pan and dry roast coriander seeds, red chillies, chana dal and urad dal.
You can either remove these into a different plate or leave them in the pan.
Now add gongura and curry leaves. Fry till they change their color.
(I have just added gongura leaves.)
Add hing and allow to cool for few minutes.
Now grind this. It became a thick paste. Don't add any water.
Take a pan and add ghee and add mustard seeds and allow them to splutter.
Add green chillies and fry till done. Now add gongura paste and fry for few minutes.
Add chopped onions and fry for few minutes. Don't need to brown them. Just sweat them.
Add chopped cilantro leaves.
Now add boiled rice and mix till properly mixed.
Enjoy gongura fried rice with potato fry or brinjal fry or with plain curd or raita.
