I was raised in my grandmother’s home. My grand parents had lots of cows. She used to make butter daily from curd or yogurt by churning them using traditional ways. Even my Mom makes butter weekly. They will collect the butter for a week and make Ghee or Clarified butter with that. I grew up helping my grandmother and mom in this procedure.
After coming to US I purchased ghee from Indian store and didn’t like the taste of it. So I decided to make my own ghee. I tried to collect cream from milk and try to make my own butter. It didn’t work. I gave up this idea. I have seen in some of the blogs that we can make our own butter from heavy cream. I have to try that. Now I’m purchasing butter and making ghee from it.
Ingredients for making Ghee or Clarified Butter:
1) Unsalted Butter 10 sticks
2) Salt a pinch
3) Pepper corns 4-5
4) Curry Leaves or Drumstick leaves few
Making of Ghee::
Bring unsalted butter to room temperature.
Take a stainless steel pan and add room temperature butter. if you are in a hurry you can use butter directly from refrigerator.
Use medium to high heat and melt butter.
Once butter is melted reduce the heat to medium and stir now and then. Don’t go away from stove. Stay close to stove. Keep an eye and keep stirring occasionally.
Add salt, pepper and curry leaves. Ghee tastes good even If you don’t any of these. But have seen my grandmother and mom add these so I add them.
Initially when you are melting butter you will be hearing sizzling sound as water will be evaporating. At the end of ghee making process sound settles down and you can smell ghee and bubbles will be forming. At this point don’t stir. Keep a close eye and swtich of the flame when sizzling sound completely stops and you can see only bubbles.
Once it is cooled you can see like this.
Now pour into clean bottle. Enjoy desi ghee or clarified butter.
When it is cooled and after couple of hours it will be have creamy texture.
How to make Ghee or Clarified Butter
- Unsalted Butter 10 sticks
- Salt a pinch
- Pepper corns 4-5
- Curry Leaves or Drumstick leaves few
Melt butter for few minutes.
ONce butter is melted and sizzling sound settles down ghee is done.
