Layered Chocolate and Coconut Gelatins

I read Martha’s Living magazine regularly. A year ago I have seen this Layered Chocolate and Coconut Gelatins on the cover page. Photos were very attractive. After checking the ingredient list ,I thought okay I should give them a try. I made these chocolate coconut gelatins as a dessert for a farewell lunch for my dear friends family. It is a hit. They assumed I had spent many hours to do this dessert ,which not quiet true 😉 Since I was trying for the first time , I had reduced the quantities by half and made this one. Next time when I do this I will just go by the recipe. Its amazing and easy on your belly without much sugars in it. My girl asked for more 🙂

Ingredients for Layered Chocolate and Coconut Gelatins:

Glasses 6 to 10 oz

For Coconut Gelatin :

Organic Coconut Milk 1 can (Coconut Cream )

Unfavored Gelatin Powder 2 Tsp

Hot Water 1 1/3 cups

For Chocolate Gelatin :

Cocoa Powder Unsweetened 2 Tbsp

Unfavored Gelatin Powder 2 Tsp

Organic Heavy Cream 2 cups

Coconut Sugar or Organic Sugar 1/2 cup  ( Original recipe calls for 2/3 cup)

Bitter Chocolate 4 oz

Water 1/2 cup

Salt a pinch

Making of Layered Chocolate and Coconut Gelatins:

First you need to make chocolate and coconut gelatins separately and then layer them in glasses. Use narrow glasses if you want multiple layers. I have used wide mouthed ones and didn’t get many layers as pictured in original recipe.

Making Chocolate gelantin :

Mix gelatin in 1/2 cup of cold water. Leave gelatin in water for 5 to 10 min. It will soften and dissolves easily.

Take a saucepan and add heavy cream when pan is hot. Add cocoa powder,sugar into heavy cream and mix.

Gently mix cocoa,heavy cream and sugar til they are mixed completely.

Now add bitter chocolate into heavy cream mixture and mix till it is melted smoothly.

Stir in gelatin into heavy cream and chocolate sauce. Remove from heat and let it cool.

Making of Coconut Gelatin:

Mix gelatin in 1/2 cup cold water. Let it sit in water and mix after 5 min. When gelatin is dissolved add hot boiling water into gelatin mix.Stir.

I had kept coconut milk in refrigerator for a day. It becomes thick like coconut cream. Or if you have coconut cream ,you can use it.( Note:Coconut Cream is used in Original recipe)

Now stir in coconut cream into gelatin and mix.

Now whisk both coconut and chocolate gelatins separately.  Filter you find any particles in the liquid. I haven’t done this. Both are liquid at this point at room temperature.

Now add layer of coconut gelatin in few glasses and chocolate gelatin in few glasses. Refrigerate these glasses for about 1 to 3 hours. My layers were done in about 1.5 hours. They should be solid because we will pour another liquid layer on top of it.If bottom layer is not solid both layers will mix up and you don’t want that.

Once layer is solidified pour another opposite layer into the glass. Use a measuring cup to pour equal quantities in each glass. I haven’t done this and got unequal layers. Refrigerate glasses again after pouring second layer of gelatins. Set alarm clock  to check if the gelatins are done.

Alternately pour chocolate gelatin and coconut gelatin and refrigerate. Set alarm and pour another layer till you run out of liquids.

If your gelatin liquid becomes semi solid then reheat them to bring them back to liquid state.

Once all layers are completed,allow them to refrigerate for about 3 hours or more. I know it is time taking but very easy and it looks gorgeous.

Finally Layered Chocolate and Coconut Gelatins are ready !
