I’m huge fan of Ree Drummond from The Pioneer Woman. I like her recipes, they way she blogs and talks on her cooking show, everything. I just adore her. In most of her recipes I have observed though she uses all purpose flour (not whole wheat flours) ,she includes flax seed meal. A disguise form form of healthy cooking. I love it.
After many months I have tried baking today. My pantry is full of wheat flours and rye flours waiting and looking at me and thinking when is she going to use us 😉
I have long list of to do baking list ,baking bread is the main one. Though I have taken many cooking classes on craftsy.com to make bread, I haven’t started baking anything yet.
Even my little girl just borrows cooking books from her library and asks me to cook them, so she can help me. She is so much into cooking .I’m afraid I didn’t have that much enthusiasm when I was a kid. I started cooking after completion of my degree ;(
Today I made chocolate chip cookies for my daughter. I looked around and finally settled for my favorite blog, the pioneer woman. Check her blog for the procedure. I haven’t taken any pictures while making it because she has step by step pictures for these chocloate chip cookies.I have made few small changes to the recipe.
Ingredients for Pioneer Woman Chocolate Chip Cookies:
All purpose flour 2 1/4 and 2 tbsp
Brown Sugar 1 cup firmly packed
White Sugar 1/2 cup
Butter(room temperature) 1 cup
Chocolate Chips 1 cup
Eggs(room temperature) 2
Instant Coffee 1 heaping tsp
Flax seed powder 2 tbsp
Vanilla essence 2 tsp
Salt 1 tsp
Baking Soda 1 tsp
Making of Pioneer Woman Chocolate Chip Cookies:
Eggs and butter should be room temperature.
Place 1 stick of butter in mixer bowl and start mixing the butter at very low speed.
After few seconds add 1 cup firmly packed brown sugar and 1/2 cup white sugar into the creamed butter. Mix them together on low speed until they are well combined. It will take couple of minutes.
Now add one egg at a time. Don’t directly crack the egg into bowl, you have to waste the sugar and butter mixture if you have bad egg. Crack eggs into a bowl and then add it to the mixer. One egg at a time.
After egg is well mixed with sugar and butter mixture add another egg. Mix then on low speed.
Add Vanilla essence 2 tsp to the mix.
Combine dry ingredients in a bowl. Add 2 1/4 and 2 tbsp of flour, 1 tsp of salt , 2tsp of Flax seed powder ,1 tsp instant coffee powder and 1 tsp of Baking Soda and whisk them together.
Now add dry ingredients in batches to the wet ingredients in mixing bowl. After one batch is mixed well into wet ingredients add another batch of dry ingredients. I used 1/3 cup and mixed them in couple of batches.
After all the dry and wet ingredients are well combined add 1 cup chocolate chips into mixer and mix them gently at low speed.
Cover the dough with plastic wrap and chill it in refrigerator for 30 min.
After 30 min, preheat oven to 375 degree F.
Scoop the dough into equal sized balls into ungreased cookie sheets.
Bake them for about 11 min. After removing them from oven wait for couple of minutes and remove them from cookie sheets and move them onto cooling rack. I have removed them into plates. Allow them to cool or enjoy them warm.
Me and my kids almost finished them while they are warm. I had to hide few to take pictures.
These cookies are so good. next time I will try whole wheat flour and see how it goes .
