easy-pongal-recipePongal is our family weekend breakfast. It is very easy to prepare. There are many variations in pongal based on region and personal tastes/ choice.

If you search for pongal online there are tons of pongal varieties.
Today I’m going to share my simple pongal recipe, which is very easy to cook and tastes yummy and healthy as well.

Pongal doesn’t raise your blood sugar levels . Its good if you are on diet or have diabetes. I had gestational diabetes with my second one. I used to take it for breakfast or lunch along with peanut chutney and my bloodsugars are always in control even if I ate little more than my allowed limit.

Ingredients for Pongal

1) Rice (You can use brown rice or regular) 1 cup

2) Moong Dal 1 cup

3) Green Chillies 4 or 5

4) Grated Ginger 1 tbsp

5) Cashew nuts few

6) Garlic pods 2 (optional)

7)Hing a pinch

8)Curry Leaves

9)Salt

10)Water 4 or 5 cups(use more if you want watery pongal)

11) Cumin seeds 1 tsp

12)Pepper 1/2 tsp

13) Ghee or Oil 2 tbsp

Making of Pongal

Take a pressure cooker. Add ghee or oil.

Add curry leaves when they are fried add cumin seeds and pepper.

Allow cumin seeds to crackle and add green chillies,chopped ginger.Fry for few minutes till they are done.

Add cashew nuts and fry till they change their color into golden brown. Add garlic(optional)

Now add hing and fry for a few seconds.

Add washed moong dal,rice  and fry for few minutes. You will get nice aroma of moong dal and other spices.

Avoid frying of dal and rice if you are in a hurry.

Add enough water and salt.Mix properly and close the lid.

Allow more whistles to cook pongal than you normally cook rice.

Wait till steam is released and enjoy with your favorite chutney or sambar. We love to eat pongal with peanut chutney
