Pumpkin Stir Fry – Gummadikaya Vepudu

Pumpkin brings in lots of memories from childhood. My grand parents used to grow pumpkins in our backyard. We used to cook them for Sankranthi festival. In US during this season their will be freshly harvested pumpkins available in all markets. My mom makes this pumpkin stir fry aka gummadikaya vepudu. I love it .It is very easy and cooks quickly.

Ingredients for Pumpkin Stir Fry – Gummadikaya Vepudu

Pumpkin (Gummadikaya) small size

Onion

Ginger garlic paste 1 tsp

Red chillies 3

Mustard seeds 1/2 tsp

Ural dal and Chana dal 1 tsp

Cumin seeds 1/2 tsp

Peanut powder (Groundnut powder) 2 tbsp (mix some salt and chilli powder )

Making of Pumpkin Stir Fry – Gummadikaya Vepudu

Take a pan and add oil when hot.

Add mustard seeds and when they crackle add urad dal and chana dal. Saute them on low flame and make sure they turn their color into light brown. This gives nice taste to whatever curry you are making.

Add cumin seeds and allow them to splutter.Add red chillies and saute.

Now add chopped onions and fry till they change their color. Add ginger garlic paste and saute.

Now add chopped pumpkin pieces. I like to have skin on, pumpkin skin gives nice crunch while you are eating.

Cover the pan and cook on medium or low flame. Stir them now and then. Check whether they are cooked.

If they stay tough for long time add some water and cook for longer time.

When they are cooked sprinkle with groundnut or peanut powder. Mix some salt and chilli powder into peanut powder.

Mix and serve Pumpkin stir fry with hot rice. Enjoy
