Quinoa Pongal /Quinoa Moong Dal Khichadi

 I have been eating more Quinoa since my second pregnancy because of my gestational diabetes. I fell in love with this superfood, Quinoa. There are many benefits of Quinoa check here
for more nutritional info.I started making many recipes using Quinoa instead of rice. I will share one of them.I have made Quinoa Pongal or Moong Dal Khichidi with Quinoa this week.

Ingredients for Quinoa Pongal /Quinoa Moong Dal Khichadi:

1) Quinoa 1 cup
2) Moong Dal 1 cup
3) Green Chillies 3
4) Ginger Chopped 1 inch
5) Cashew nuts few
6) Garlic pods 2 (optional)
7) Hing pinch
8) Curry leaves
9) Ghee or Oil
10) Salt
11) Water 4-5 cups
12) Cumin 1/2 tsp
13) Pepper few

 Making of Quinoa Pongal or Moong Dal Khichadi :

 You can either use pressure cooker or cook in a pan. Take a pan and add Ghee. When ghee starts melting add curry leaves and wait for them to splutter.

Add cumin and pepper and fry for few seconds. Add chillies, chopped ginger , garlic and cashew nuts and fry till cashews are brown in color and add hing.

Now add washed Quinoa , moong dal and water and cook.

Quinoa generally needs 2 cups of water for one cup of quinoa and it will be cooked within 15 -20 min.
