Ragi Idli

Today I have made another variety of Idli, Ragi Idli. It tastes very much like ragi ball with urad dal flavor. It is different option for diabetic people who eat more ragi ball. This will be another variation for diabetics. Even for non diabetics this ragi idli is so good as it provides lots of vitamins and minerals and less carbs compared with Idli made from rice.

I have made this Ragi Idli using ragi flour instead of whole ragi.

Ingredients for making Ragi Idli :

Ragi Flour 2 Cups

Urad dal 1 cup

Salt

Fenugreek (Methi) Seeds 1 tbsp

Making of Ragi Idli:

First soak urad dal overnight or for min of 1 hour.

Grind urad dal into fine batter.

I slowly added ragi flour into the grinder itself and grind for 10 min. This mixed ragi flour into urad dal batter nicely without any lumps.

Or you can slowly mix ragi flour into urad dal batter using whisk or spoon. Its your call .

Add salt and mix.

Allow the ragi idli batter to ferment overnight. Fermenting helps idli to bake or steam properly.

Once ragi idli batter is fermented, mix the batter.

Now add baking soda into tbsp of water and mix well and add this soda water into idli batter. Don’t dump soda directly into batter it won’t mix properly and after steaming idli you can see small yellow patches here and there on cooked idli,not good.

Some people won’t add any soda to idli batter and still they make good idli’s .

My MIL won’t add but still she makes good idli. My Mom adds soda and idli tastes good. Obviously I too add soda 🙂

Grease your idli plates with little bit of oil. It hepls idli to come out easily without sticking to the plates.

First Boil water in the idli cooker and when water starts boiling slowly put the idli plates into the idli cooker and cover and let it steam for about 10 -15 min.

After 15 min. Switch off the stove and let it cool for few minutes.

Remove idly plates from idli cooker and scoop ragi idli.

Serve Ragi idli with your favorite chutney.

To make process quick. Start boiling water in cooker and then grease your idli plates. While water is ready idli plates will be ready and helps save some time.

Microwave peanuts for 2 min and chutney will be ready in no time. Or you can roast peanuts in bulk and use that for making peanut chutney.

I know mornings will be busy for housewife’s. Plan mentally and save some time 🙂
