Simple Chicken Biryani

I have got this simple chicken biryani recipe from my friend. He makes this all the time and it turns out just perfect. It needs no marination but takes long time to cook.

I prepare many biryani’s but haven’t posted any of them here. So I took some pictures while making this just to have a record for myself. To make perfect biryani I believe key Ingredient is cooking rice 🙂

This time also I overcooked my rice but taste was very very good.

Ingredients for Simple Chicken Biryani :

Whole Chicken

Onions Thinly Chopped 2

Ginger Garlic Paste 3 tbsp

Green Chillies 5 -6

Tomato 1 medium

Thick Curd /Yogurt 1/2 cup

Turmeric Powder 1/4 tsp

Chilli Powder 1 tbsp

Coriander powder 1 tbsp

Whole Garam Masala (Cinnamon ,Cloves,Cardamom,Star Anise,Mace, Fennel Seeds)

Bay Leaf

Basmati Rice(Soak rice for atleast 30 min)

Ghee/Oil

Salt

Making of Simple Chicken Biryani :

 

Take a heavy bottom pan and add ghee. When ghee starts is hot add whole garam masala ingredients.

Saute whole garam masala on low flame. This is crucial. All ingredients need to be saute’d for good aroma.

Now add thinly chopped onions. Fry them till they are done. (My friend suggested to fry onions till they are brown in color) I fried them just before they turn into brown color.

Now add ginger garlic paste and saute. Use freshly paste not store bought one if possible.It makes a huge difference.

Now add chopped tomatoes and saute till water from tomatoes are gone.Simple_Chicken_Biryani_tomatoes

Now add chicken pieces. You don’t have to marinate, just clean chicken pieces.

(Accidentally I have added turmeric ,chilli and dania powders 🙁 )

Saute chicken pieces on high flame for about 5 min. Chicken pieces will change their color.

Now cover the pan and cook on very low flame for about 30 min. Stir often to make sure nothing sticks to the pan.

While you are waiting for the chicken to cook, prepare rice for biryani.

When chicken is half cooked start preparing rice.

Take a pan and add ghee. When ghee is melting add cardamom,cloves,cinnamon stick and saute. Add soaked rice and saute.

You will smell rice aroma if you are using basmati rice. Saute till rice is all dry. Now add lots of water.

When rice is half cooked. Switch of the flame.

This is crucial. Don’t move away from stove. Stay close and check whether rice is cooked. If you cook rice 100 % then you won’t get perfect biryani.

Now check whether chicken is cooked. It should come out of bones.

At this point add salt,turmeric powder,chilli powder,coriander powder and mix. Cover the pan and let it cook for about 10-15 min. Stir frequently so nothing sticks to the pan.

Now remove chicken masala into bowl leaving 25% in the pan.

Now add rice on top of remaining chicken masala in the pan. Use a spoon to scoop rice from water removing excess water. Add top portion of rice on top of prepared chicken masala, because top portion of rice in rice pan will be less cooked compared with rice in the bottom of rice cooked pan.

Now sprinkle some fried onions(if you have store bought one), coriander leaves and mint leaves. Add ghee some ghee on this layer.

On top of this layer add chicken layer. Now on top of this add rice layer. Repeat this.

On top layer sprinkle fried onions and coriander leaves,mint leaves and ghee.

This is like arranging layers of rice and chicken.

First chicken layer and top of it add rice from another pan.Add chicken and rice repeat. So bottom rice from another pan will become top layer of biryani. This rice will be more cooked. So with the steam coming from chicken this rice will be ready.

Cover the pan and cook on very low flame.

Tip from Vahchef is cook this biryani on top of heavy dosa or pancake pan. Cover the lid tightly with chapathi dough.

(I haven’t done this,but I cooked on very low flame. Cook for about 5 to 10 min. Switch of the flame. Rice will be cooked from the steam with the pan.I was impatient so I dumped all rice into chicken masala and mixed it. Cooked for about 5 min and left for about 10 min with flame switched off.)

Simple chicken biryani is ready. Serve hot with any raita or your favorite curry. (Mine was cooked more than required ,but taste was so good)
