Tomato Fried Rice

This is prepared using left over rice or freshly prepared rice. if you are using freshly prepared rice make sure you cool that rice and then make this tomato fried rice.

Tomato Fried Rice

Ingredients for Tomato Fried Rice:

Rice 2 cups

Tomatoes 2

Green Chillies 4 or 5

Ginger garlic paste 1 tbsp

Onions 1

Coriander powder 1 tsp

Chilli powder 1 tsp

Turmeric powder 1/2 tsp

Curry leaves

Coriander leaves

Fennel Seeds/Sompu 1 tsp

Cinnamon Stick 1

Cloves 4

Salt

Oil

Preparing Tomato Fried Rice

First take a pan and add oil when pan is hot. I have used butter.

Add cinnamon stick,cloves and fennel seeds. Saute for few seconds.

Add curry leaves and allow them to splutter.

Add chopped onions and chillies and fry them till they are done.

Add ginger garlic paste and saute.

Now add chopped tomatoes and fry them till water is evaporated from tomatoes and masala is thick not watery.

Add dry powders and saute till they are mixed into tomato masala. You can add pepper powder too if you like.

Now add salt and check for taste.Add rice and mix properly.

Garnish with coriander leaves.Serve hot with curd along with lemon.
