I have grown up with wonderful and experimental cook,my MOM, and healthy food lover,my DAD. My Dad is very strict when comes to food. He always loves healthy food and it is very tough to please him. My Mom is only person who could satisfy his taste buds.I had tried my luck in impressing my Father many times after learning how to cook. But never got approved unfortunately 90% of the time ๐Ÿ˜‰ But I guess I had impressed his last moments by making Vegetable Biryani, my Father’s style.Vegetables should be cut in big pieces and more veggies less rice and less masala.Even typing this I still remember those days,his last days and it brings tears and can’t control myself. I miss you Nanna.

My Mom is no less compared to Dad.When I was kid my Mom makes sure I eat all my veggies in my plate.If I don’t finish any one of them, I can’t move away from dining table.How much ever time it takes I have to finish that and move on.She still makes fun of me telling my childhood stories. One of them is eating karela. I used to eat it like tablet ๐Ÿ™‚ In my family we eat all sort of veggies.My Mom adds veggies in all breakfast recipes. She grates vegetables and add it Idli or Dosa batter. She adds grated or pureed veggies into Chapathi and Upma.

Even I continue the same legacy in my cooking. I don’t make simple rava upma. I’ll add whatever vegetables I have on hand. I try to select vegetables based on color. Try to incorporate different colors into my cooking for health.Today I have made Vegetable Rava Upma or Rava Kichidi ,as some people call it.

Ingredients for Vegetable Rava Upma/ Rava Kichidi:

Rava/Sooji 1 cup (Substitute with wheat rava,oats, quinoa)

Onion medium 1

Green Chillies 3 to5

Ginger Garlic Paste 1 tbsp

Chopped Vegetables of your choice 1 or 2 cups ( Carrots,Beans,Cauliflower,Peppers,Peas,Potatoes,Beetroot,Cabbage,Broccoli etc)

Tomatoes 1 or 2 (Optional)

For Tampering :

Urad Dal 1tsp

Chana Dal 1 tsp

Mustard Seeds 1tsp

Cumin Seeds 1 tsp

Cinnamon Stick 2 (optional)

Cloves 3 or 4 (optional)

Fennel seeds 1tsp (optional)

Oil

Salt

Water 2 cups( some people add 1.5 to 1 cup depends on your choice)

Making ofย  Vegetable Rava Upma/ Rava Kichidi:

Chop your vegetables into smaller pieces.

Take a pan and add oil when pan is hot.

Add mustard seeds and when they crackle add urad dal,chana dal and cumin seeds.

Fry them on low flame till dal’s change their color to golden.

Now add chopped onion and saute till they are transparent and add chopped green chillies and ginger garlic paste.

Fry them for a minute and when raw smell is gone add chopped vegetables and saute for few minutes. Now add chopped tomatoes. I didn’t add tomatoes this time.

You can fry tomatoes first and then vegetables or fry vegetables first and then add chopped tomatoes. It is upto you.

Now add rava to the pan and saute for few minutes.

Also you can fry rava in another pan before adding it to this vegetable pan. Choice is yours.

Make sure rava is fried enough before adding water. I add hot water to speed up cooking process.

Cover and cook vegetable rava kichidi till done. Switch off the flame when water is all evaporated. Close the lid for few 5 to 10 min.

Serve with your favorite sauce. I like to serve with peanut chutney or any chutney or sugar (Me and my kids love upma with sugar can’t help;) or store bought pickle.

This time I was lazy and took pictures with sugar and pickle. You can even serve with ketchup if your carzy like my kid ๐Ÿ˜‰
